I noticed that in the blessing for praising God, Adonai is spelled with 2 yods and in the blessing over foods, Adonai is spelled differently. Why is this.

There are different conventions for writing Hebrew prayers/blessings.... Yod-Yod (יְיָ) is one "circumlocution" for the Divine Name that is traditionally used in many prayer books. For example:


בָּרוּךְ אַתָּה יְיָ אֱלֹהֵֽנוּ מֶֽלֶךְ הָעוֹלָם, הַמֵּכִין מִצְעֲדֵי גָֽבֶר

Praised to You, Adonai our God, Sovereign of the universe,
who strengthens our steps.
